“No Cook Meal” of the Day – Summer Chicken Salad with Peaches, Walnuts, and Blue Cheese

This light and refreshing summer chicken salad is a complete, delicious summer meal. It is a fantastic dish to incorporate those ripe, fresh peaches that are at their peak this time of year. The sweetness of the peaches is a great compliment to the salty flavor of the blue cheese; and the walnuts add a wonderful, flavorful crunch.

2 heads Romaine lettuce, cut into thick chunks (or substitute baby spinach, arugula, or watercress)

1 store bought cooked rotisserie chicken (available at almost all supermarkets), cut or torn into large chunks

2 large peaches, roughly chopped

3/4 cup (about 3 ounces) crumbled blue cheese

1/2 cup (about 2 ounces) roughly chopped walnuts (or almonds)

1/4 cup white wine vinegar

1/4 cup extra virgin olive oil

1 teaspoon salt

1/4 teaspoon pepper

Arrange the lettuce, chicken, peaches, nuts, and cheese either on a large platter or on individual plates. In a small bowl, whisk together the vinegar, olive oil, salt and pepper. Drizzle the vinaigrette over the salad and serve. (yep – it’s that easy!!!)

Makes 4 large servings. Per serving: 218 calories, 9 g total fat, less than 0.5 g saturated fat, 0 g trans fat, 12 g carbohydrates, 5 g fiber, 0 g added sugar, 28 g protein, 207 mg sodium, 23 mg cholesterol
