Sinfully Delicious Light Cherry Clafouti

You won’t believe how BIG the servings are for this dessert. I have a terrible sweet tooth, so whenever I make this dish, I get really excited because I know that I am going to get a whole big piece all to myself!! Hey, like I’ve said in the past, it is all about moderation and balance — I refuse to give up my desserts, so I come up with healthier versions of my favorites instead! Plus, you have to treat yourself and indulge every now and then to keep yourself on track. I really hope that you try this clafouti the next time you are in the mood for something sweet. I guarantee that you can’t help but smile at the pleasure of seeing a big old piece of dessert – all for you!

1 cup skim milk

3 whole eggs

2/3 cup flour

2 tablespoons sugar

pinch of salt

2 tablespoons Grand Marnier (or orange juice)

1 teaspoon butter

2 tart apples, cored and thinly sliced

2 additional tablespoon sugar

1 cup fresh pitted cherries (you can also use golden cherries, blueberries, raspberries or blackberries without having to vary other ingredients)

1 tablespoon powdered sugar

Preheat oven to 425 degrees. generously grease a 12 inch shallow baking dish.

Whisk milk, eggs, flour, 2 tablespoons granulated sugar, and salt until smooth; stir in the liqueur (or orange juice). Batter will be fairly thin.

Melt the butter in a frying pan over high heat and add apple slices; sprinkle apples with the additional 2 tablespoons sugar. Saute apples until softened (about 3 to 4 minutes). Distribute the apples evenly over the bottom of the prepared baking dish. Pour the batter over the apples and scatter the cherries on top (most of them will sink down into the batter). Bake until golden brown ad lightly puffed (about 30 – 35 minutes) Dust with powdered sugar and serve warm.

Makes 6 servings. Per serving: 207 calories, 4 g total fat, 1.5 g saturated fat, 0 g trans fat, 33 g carbohydrates, 3 g fiber, 4 g added sugar, 6 g protein, 77 mg sodium, 81 mg cholesterol.

    Very tasty summer dessert. I made it with fresh raspberries instead of cherries. I love how big the portions are!
