Fresh Fruit and Cream Breakfast Treat

This breakfast treat is so fast, easy, and delicious, it is sure to become one of your new favorites. Add it to your brunch menu and impress your guests with literally no effort!

4 cups mixed fruit of your choice (berries, melon, grapes, peaches, banana, mango, apple, pineapple)

1/2 cup part skim ricotta cheese

3 tablespoons powdered sugar

1/4 teaspoon vanilla extract (or almond extract)

6 tablespoons orange juice

2 tablespoons honey (optional)

2 tablespoons chopped nuts (optional)

2 tablespoons raisins (optional)

Combine the fruit and orange juice in a large bowl, let sit for at least 5 minutes (while you make the cream), and then spoon the fruit into individual bowls.

In a blender or food processor (or with a handheld mixer), Mix the ricotta, sugar and vanilla until fluffy and creamy.

Spoon the cream over the fruit, and if desired, drizzle with honey, chopped nuts, and raisins.

NOTE: The nutrition information will vary slightly for this recipe depending on which fruits you choose – the numbers listed above are an average. For example, carbohydrates would higher if fruit was comprised of mostly banana.
