		<description>Hi!  I wanted a light pumpkin muffin recipe and found your sweet potato muffin recipe.  I doubled the recipe so that I could use a whole can of pumpkin.  I didn&#039;t add the nuts and I used flax meal and boiling water to substitute for the whole egg.  They turned out really well.  Next time I will make sure I sift the ingredients together.  (I had lumps of baking soda in my muffins.  Blech.)   And I think I will use pumpkin pie spice instead of just cinnamon.  Thanks for the recipe!
