  • 1 cup whole wheat pastry flour
  • ½ cup all purpose flour
  • 1 cup sweet potatoes (cooked and well mashed)
  • ¼ cup light brown sugar (packed)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 whole egg
  • 1 egg white
  • 1 teaspoon vanilla extract
  • ½ cup low-fat buttermilk (or 1/2 cup skim milk wilk 1/2 tablespoon vinegar or lemon juice stirred in)
  • ½ cup unsweetened applesauce
  • ¼ cup raisins
  • 2 tablespoons cup chopped nuts (optional)

Instructions
 

  • Preheat the oven to 350 degrees and generously spray a 6 cup jumbo (or 12 cup standard) muffin tin with nonstick spray. 
  • In a large bowl, combine the flour, baking powder, baking soda, salt, sugar and cinnamon and mix well. In another bowl, combine the sweet potatoes, egg, egg whites, vanilla, buttermilk and applesauce.
  • Make a well in the center of the dry ingredients and add the wet ingredients to the well, mixing until just moistened. Fold in the raisins and nuts.
  • Divide batter evenly between the muffin cups and bake for 22-25 minutes (or until a toothpick inserted in the center of a muffin comes out clean). Cool for 5 to 10 minutes before removing from the pan.
