Equipment

  • 1 large pot
  • 4 plates

Ingredients

  • 4 fresh halibut fillets (with the skin taken off)
  • 1 pound new or red bliss potatoes
  • 1 pound green beans (or you can substitute asparagus, if you prefer)
  • cups  dry white wine (or low-sodium chicken broth)*
  • 2 tablespoons unsalted butter
  • 2 tablespoons fresh chives, chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Place the potatoes in a large pot and add enough cold water to cover them. Bring the pot to a boil and cook them for 10-15 minutes, then add the green beans to the pot and cook about 5 minutes more (the vegetables should be slightly tender – if they are still pretty firm, just boil them for another minute or two).
  • While the vegetables are cooking, season the halibut with 1/4 teaspoon each of the salt and pepper. Place the halibut in a large skillet and add just enough of the wine or chicken broth to come halfway up the sides of the halibut fillets (*you may not need to use the entire 2 1/2 cups, depending on the size of your skillet.*)
  • Heat the skillet over medium-low heat, and bring the wine to a simmer. Cover the skillet and cook the fish for 6 to 8 minutes (until the centers are opaque and the fish flakes easily).
  • Transfer the fillets to individual serving plates. Drain the vegetables and divide them among the 4 plates. In the empty vegetable pot (or another small saucepan) heat the butter, chives, and remaining 1/4 teaspoon salt and pepper over medium heat just long enough to melt the butter.
  • Divide the butter mixture between the four plates, drizzling over both the fish and the vegetables. Serve warm.

Cooking Tips

Halibut with New Potatoes and Green Beans
Indulge in the tender and flaky goodness of our perfectly cooked halibut

To help you achieve the best results with your Halibut with New Potatoes and Green Beans recipe, here are some valuable cooking tips and insights to keep in mind:

  • Perfectly sear the halibut: Before cooking the halibut, make sure the fillets are patted dry to remove any excess moisture. This will help achieve a beautiful golden crust when searing. Heat a skillet with a drizzle of olive oil over medium-high heat, and cook the halibut for a few minutes on each side until it develops a crispy exterior while remaining moist and tender inside.
  • Season generously: Seasoning is key to bringing out the flavors of the dish. Don’t be shy when adding salt, pepper, and other herbs or spices to the halibut, new potatoes, and green beans. Generously sprinkle them with your desired seasonings to enhance the taste and create a well-balanced dish.
  • Mind the cooking time: Overcooking the halibut can result in dry and rubbery fish. Keep a close eye on the cooking time and check the internal temperature with a meat thermometer. The fish should reach an internal temperature of 145°F (63°C) for perfect doneness.
  • Optimal doneness for potatoes and green beans: To ensure that the new potatoes and green beans are cooked to perfection, aim for a tender yet slightly firm texture. Test the doneness by inserting a fork into the potatoes and beans. They should offer a little resistance but should still be easy to pierce.
  • Avoid overcrowding the pan: When searing the halibut or cooking the vegetables, it’s crucial to give them enough space in the pan. Overcrowding can cause the ingredients to steam instead of achieving a nice caramelization. Cook the halibut in batches if needed, and use a large enough pan for the vegetables to ensure proper cooking.
