Equipment

  • 1 small bowl
  • 1 medium separate bowl
  • 1 non-stick griddle, or frying pan

Ingredients
  

  • cups whole wheat flour
  • ¼ cup all purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • teaspoon ground ginger
  • 2 VERY ripe mashed bananas
  • 1 cup skim milk
  • 2 egg whites
  • 1 teaspoon vanilla extract

Instructions
 

  • Combine flour, baking powder, salt and ginger in a small bowl. In a larger separate bowl, combine mashed banana, milk, egg whites and vanilla.
  • Add the dry ingredients into the banana mixture and stir until moistened (don’t overmix, batter will be lumpy). Let stand at room temperature for 10 minutes. 
  • Meanwhile, preheat a non-stick griddle, or frying pan over medium heat. Pour a scant 1/4 cup batter for each pancake. Cook 3 to 4 minutes on each side, or until golden brown.

Notes

The variations for these pancakes are endless! Try them with chopped nuts and maple syrup, spread with fruit preserves, topped with ripe berries – whatever you would like. Sometimes, when we’re feeling decadent, we mix 1/4 cup chocolate chips into the batter and dust with powdered sugar…..Delicious!!
