Low Fat Brownies

These heavenly low calorie, low fat chocolaty treats have all of the chewy richness of traditional brownies, but contain only a small portion of the fat and calories. They are a necessary treat for those days when you just have to have something rich, gooey, and truly satisfying. You can play around with Low Fat Brownies as well: substitute butterscotch chips or peanut butter chips for the chocolate chips and pecans or peanuts for the walnuts.

Ingredients
  

  • ½ cup all purpose flour
  • ¾ cup light brown sugar, packed
  • ¼ cup unsweetened cocoa powder
  • ¼ cup skim milk
  • ¼ cup honey (or pure maple syrup)
  • 1 whole egg
  • 2 additional egg whites
  • 5 tablespoons non hydrogenated butter or margarine, melted (such as “Earth Balance”)
  • 2 tablespoons semisweet chocolate chips
  • 2 tablespoons coarsely chopped walnuts (if you choose not to add the walnuts, feel free to add an additional 2 tablespoons chocolate chips)
  • 1 teaspoon pure vanilla extract

Instructions
 

  • Preheat the oven to 350 degrees and generously spray an 8 inch square baking pan with nonstick spray; set aside.
  • Combine the flour, brown sugar and cocoa in medium bowl and stir together well. In a separate bowl, whisk together the egg, egg whites, butter, milk, honey (or maple) and vanilla until well blended.
  • Add the wet ingredients to the flour mixture and mix well. Pour the batter into the prepared pan and sprinkle the chocolate chips and walnuts (if using) to cover the top of the batter (they will start to “sink”).
  • Bake the brownies for about 25-30 minutes (or until a toothpick inserted in the center comes out clean).
  • Cool completely in the pan on wire rack. Once completely cooled, sprinkle with powdered sugar (if desired) and cut into 10 equal sized squares.

Notes

For an extra touch of indulgence, you can add chopped nuts, such as walnuts or almonds, to the brownie batter. They will provide a delightful crunch and complement the chocolatey goodness.
