- Preheat oven to 350 degrees. Coat a 9 by 5 inch loaf pan with non-stick cooking spray.
- Combine flour, baking soda, and salt. In a separate bowl, beat egg whites, sugar, banana, milk mixture, and applesauce until evenly blended. Mix in flour mixture until just moistened. Stir in figs and walnuts.
- Pour batter into prepared pan and bake for one hour. Cool on a wire rack for 10 minutes, then remove loaf from pan and cool another 10 - 15 minutes before slicing.

* Add a teaspoon of vinegar or lemon juice to the milk and set aside to “curdle”. This is a healthier alternative to using buttermilk when baking
