  • 5 additional egg whites
  • 2 tablespoons skim milk
  • 1 tablespoon extra virgin olive oil

  • ½ teaspoon black pepper

  • In a large bowl, whisk together the eggs, egg whites, pepper, chile powder, skim milk, and olive oil. Whisk the mixture very well until it is light and foamy.
  • Generously spray a skillet or frying pan with nonstick cooking spray and place it over medium heat for about 1 minute. Pour 1/4 of the egg mixture (about 1/2 cup worth) into the skillet.
  • Cook (without stirring) for 1 minute, then use a spatula to gently lift one edge of the omelet and tilt the pan slightly so that some of the uncooked egg flows underneath. Continue to cook until the top is almost completely set (another 2-3 minutes).

  • Repeat 3 more times (to end with 4 omelettes) . Sprinkle the top of each omelet with the chives, and any remaining cheese.
